In this video i'm going to show you how to reverse sear a tri-tip steak!
Tri-tip steak is a great cut, however you need to be mindful that the grain changes in the steak. So have a look before you season and cook it so you know which way to cut when it's done!
I'll also show you how to make a quick and easy salsa verde to serve with the steak, here's the recipe:
- 1/2 cup basil
- 1/2 cup flat leaf parsley
- 1 clove garlic
- 1tsp capers
- 1/4 cup olive oil
- Juice of 1/2 a lemon
- Salt and pepper to taste
You can add anchovies too if you like however I left them out.
With the tri-tip steak I trimmed off any excess fat and silver skin, then I seasoned it, smoked it at 275F/135c until it reached 125F/52c internal, rested it and finished it off with a sear. If you didn't want to light up more fuel for the sear, you can always sear in a pan.
