Madeleines are small, buttery cakes in the shape of a shell. They originate from France and are the perfect treat with a cup of tea/coffee. This easy recipe will take you through all the steps required to make these French treats at home.
**Ingredients**
● 100g plain flour
● 3g baking powder
● 100g butter
● Squeeze of lemon juice
● 2 whole eggs
● 100g caster sugar
● 20g honey
● 2-3 tsp matcha powder
● White chocolate
**Method**
1) Break the eggs in a large bowl.
2) Pour the sugar and whisk until pale.
3) Add matcha powder + honey and keep whisking for until white and foamy.
4) Melt the butter.
5) Add a squeeze of lemon juice and pinch of salt to the melted butter.
6) Allow to cool.
7) Sift flour and baking powder into the egg mixture.
8) Mix until all the flour is incorporated.
9) Pour he melted butter in and whisk again until everything is combined.
10) Let the batter rest for minimum 2 hours at room temperature.
11) Grease Madeleine pan with melted butter.
12) Add a spoon of batter in each mold.
13) Bake the madeleine for 10 minutes starting on high heat at 220 degrees celsius for the first 3 minutes.
14) Reduce the heat to 200 degrees celsius and bake for a further 6 to 7 minutes.
15) Melt the white chocolate in a heatproof bowl. You can do this by microwaving in 15 second intervals until white chocolate is melted.
16) Pour melted white chocolate in the Madeleine molds.
17) Press the cooked Madeleines into the molds and freeze for one hour.
18) Remove Madeleines and dust with matcha powder.
