Like I mentioned in the video, Nikole's book isn't vegan but it's super plant focused and vegan friendly. This soup was DELICIOUS and I highly recommend it!! Thanks for sending me this book Nikole. I love it :)
Roasted Veggies with Vegan Sausages + Cranberry Balsamic Reduction
Start by selecting some of your favorite root veggies like potatoes, carrots, onions, and turnips. Then pick a few hearty green veggies like cabbage and Brussel sprouts too. I also chop up a few apples to add some variety to the mix.
Wash, pat dry, and then chop. Tip: cut the hard veggies like potatoes, carrots and turnips into small pieces so they cook quickly and cut the cabbage, onions, and apples a bit larger because they have more water and will cook faster.
Season generously with olive oil, sea salt, pepper, ground sage, dried rosemary, and red pepper flakes if desired. Then transfer to a large baking sheet.
Remove the casings from some vegan sausages (I used the Apple Sage Sausages from Field Roast) and place on top. Brush lightly with olive oil if desired and bake for about 25 minutes at 375 or until the veggies are cooked through.
In the meantime, make the tangy Cranberry Balsamic Reduction by combining 1 cup unsweetened cranberry juice, 1/2 cup balsamic vinegar, 4 tbsp of maple syrup, and 1/2 cup dried cranberries in a saucepan. Bring to a boil, then lower heat to low or a 2 out of 10 on your stove, cover, and simmer for 20 minutes or until thickened and reduce by half.
Note: you want plain cranberry juice, not cranberry juice cocktail :)
Season the sauce with a BIG pinch of sea salt and pepper and serve along side the veggies and vegan sausages.
Note: I plan for 2 sausages per person and often make 2 sheet pans full of veggies and sausages to use thought the week. Serve leftovers as is, or slice the sausages and top the warm veggies on salads or with quinoa to change things up.
