With potatoes, zucchini, carrots and rice together with just a few other ingredients , you make this irresistible recipe that is ideal for dinner or lunch on any day of the week.
This is a very good vegetarian or even vegan dish too. You can top it with a piece of chicken fish or beef too, if you prefer.
INGREDIENTS
1 Tbs Avocado oil, or any cooking oil of your choice
1/2 c Red onion, diced
1 Tbs Garlic, chopped
1 Tsp Ginger, minced
1Tbs Cumin coriander powder
1 Tsp Fresh thyme, chopped
1/2 Tsp Fresh rosemary, chopped
2 Roma tomatoes, diced
4 Yukon Gold ( Yellow )potatoes, peeled and cut bite size
2 Small carrots, peeled, roll cut or dice medium
1 Yellow bell ( 1/2 if large ) diced medium
1 Zucchini, washed, diced large
1/2 Frozen peas
1 Tbs Fresh parsley or cilantro
1 c Basmati rice, rinsed until water runs clear, soaked
1 Tsp Vegetable base ( optional )
1 3/4 c water or vegetable stock
Kosher salt and pepper to taste ( Always season as you go )
To Finish
1 Tbs Extra virgin olive oil
1 Tbs Lemon juice
1 Tbs Parsley, chopped
