Roasted Fall Vegetables Salad- I call it “THE FALL IN THE BOWL”
Ingredients:
3 cups butternut squash (diced into cubes)
2 cups beets (diced into cubes)
1 cup carrots (diced into cubes)
1/4 cup olive oil
1/2 tsp salt
black pepper
1 lemon
1/2 cup feta cheese
Bake at 400F for 35-40 minutes or until vegetables are soft.
