Today I'm trying out Claire Saffitz's Miso Buttermilk Biscuits from her Dessert Person Cookbook. I'm no stranger to making flaky, buttery biscuits (links below), so I'm excited to introduce a new flavor combination into my biscuit recipe rotation. I made this recipe using sweet white miso, which is what Claire recommends for the milder flavor -- though you could use any type of miso you like (the darker colors just have a saltier & funkier flavor). White miso is a good option if you're new to using miso as the flavor is mild! Miso brings a lot of salty flavor to the biscuits, so this recipe calls for no added salt. In addition to saltiness, miso also provides an almost cheesy aftertaste due to the funkiness and tanginess hitting your tongue like a sharp cheese would -- I LOVE it :-) This recipe also uses buttermilk for tenderness and lightness in the biscuit (the acidity reacts with the dry bases -- both baking powder and soda -- to deliver exceptional lift and rise during the baking process. If you don't want to buy buttermilk, you can use regular dairy milk with an added 1 1/4 tsp of distilled white vinegar or lemon juice, then allow it to sit chilled for 10 minutes. The added acid will slightly curdle your milk -- that's OK! -- and provide acidity needed for the chemical reaction during baking. Overall, I loved the flavor and texture of this biscuit. These are best consumed the day they're made, so store any unneeded biscuits in the freezer for up to a month and bake them when needed. Baking directly from frozen works perfectly; keep the oven temp the same, but add an extra 3-5 minutes to the bake time. This biscuit recipe is perfect as-is, but if you want an extra hit of saltiness, sprinkling with some flaky salt before baking would be a great addition. Hope you enjoy!
