Aubergine spread dip is very famous in Romania and so loved . Especially in the summer is not missing from our table .
It’s easy to make , very tasty and healthy .
Ingredients:
4 aubergines
2 egg yolks
50 ml oil
1 onion
Lemon juice
Salt and pepper
Method :
Fire roast/on the pan/grill or in the oven the aubergines until the skin is burned . Remove and let it cool down .
Peel of the skin and place them on a rack , let them drain the juice .
In a food processor combine the aubergines, onion and lemon juice and eggs , blend for 1 minute . Season with salt and pepper and start adding the oil little by little and mix until all oil is finished . Blend to a smooth paste .
You can do it without a food processor also , it’s takes a bit of time .
Chop with a knife the aubergines as fine you can and the onion same . Same process ☝️ .
Serve on the bread slice or just on its own
