BARBEQUE NATION'S FAMOUS CAJUN POTATOES RECIPE 😍
INGREDIENTS:
- 20 baby potatoes
- Water for boiling
- 2/3 cup mayonnaise
- 2 Parika/Red chilli powder
- 1 Tsp onion powder
- 3 Tsp garlic powder
- 1/2 Tsp pepper powder
- 1 Tsp chilli flakes
- 1/2 Tsp mixed herbs
- Salt to taste
- Oil for shallow frying
- 4 Tbsp cornflour
- 2 Tbsp Maida
- Water for making slurry
- 1/2 cup Milk (optional)
- 1/2 Onion chopped
- 1 Tsp Coriander leaves for garnishing
METHOD FOR POTATOES:
- Boil potatoes with skin in 2 whistles and then simmer on low flame for 20min
- Let them cool and smash them flat
- Make a slurry with cornflour, maida and water
- Dip potatoes in slurry
- Shallow fry on both sides till it's crisp
- Keep aside
For topping:
- In a bowl, mix mayonnaise, all 4 spices, chilli flakes, mixed herbs & salt
- If consistency is thick, add some milk
Layering:
- Place potatoes on a flat plate
- Top with prepared cajun sauce
- Garnish with chopped onion & coriander leaves
