The perfect little gingersnaps--a crispy exterior with a chewy center!
RECIPE:
2 cups gluten-free oat flour
1 tsp. baking soda
¼ tsp. salt
1 tsp. ground cinnamon
½ tsp. ground ginger
½ tsp. ground cloves
½ tsp. ground nutmeg
1/3 cup brown sugar
1/3 cup olive oil
¼ cup molasses
1 tsp. vanilla
½ cup sugar
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add oat flour, baking soda, salt, spices, and brown sugar. Stir well. Add oil, molasses, and vanilla, and mix until a dough forms. Put the ½ cup of sugar into a small bowl. Shape the dough into balls, roll in sugar, and place on an ungreased pan. Bake 8-10 minutes. Let the cookies cool on the pan for a few minutes and then enjoy! Makes 16 cookies.
