[Ingredients]
6 cucumbers, 100g leek, 5 roots of chives, 1/3 carrot, 4 tbsp coarse salt
[Pickling ingredients]
1 tbsp salt, 1 tbsp sugar
[Sauce ingredients]
4 tbsp red pepper powder, 1/2 onion, 1 tbsp canary fish sauce, 2 tbsp plum juice, 3 cloves of garlic, a little ginger, a little salt
[Cooking order]
1. Scrub cucumbers with coarse salt and wash well under running water.
2. Cut the cucumber into quarters and remove the seeds from the inside.
3. Remove the seeds and cut the cucumber into 3 parts again.
4. Add pickling ingredients to cucumbers, mix evenly, and pickle for 30 minutes.
5. Cut the garlic, onion, and ginger to add to the kimchi sauce ingredients.
6. Put the cut whole garlic, onion, and ginger in a blender, add the pickled canary fish sauce and plum juice together, and put it in a blender.
7. Turn the pickled cucumber over once so that it is evenly seasoned.
8. Cut the leek into 2cm long.
9. Chop the chives finely.
10. Slice the carrots.
11. Strain the pickled cucumbers through a sieve to remove the pickled water.
12. Put the kimchi sauce ingredients in a blender and red pepper powder in a bowl, mix and leave for 5 minutes.
13. Add the pickled cucumbers and carrots to the kimchi sauce ingredients and mix.
14. Finally, add leek and chives and mix together.
15. If saltiness is insufficient, add more salt.
16. Put the cucumber kimchi in a container.

1. Remove the cucumber seeds for a crispy taste.
2. Do not rinse pickled cucumbers with water.
3. Mix red pepper powder with the kimchi sauce ingredients, soak it a little, and use it for a more beautiful color.
4. Put the leek at the end and mix it gently.
