This is my wife's comfort food especially when she's feeling under the weather. It is so quick and easy to make that you can cook this dish in under 15 minutes. The broth is usually made from boiling dried fish or meat bones but since this is the "Easy version", you can use any store-bought broth of your choice or even use the powder broth.
Ingredients:
-1 cup of kimchi (store bought)
-1 tablespoon of Korean hot pepper paste (Gochujang)
-1 tablespoon of Korean red pepper powder (Gochugaru)
-2 garlic cloves (chopped)
-1 medium size onion (sliced)
-Few slices of ginger
-Enoki mushrooms
-Green onions (for garnish)
-1 package of silken/soft tofu
-2 beaten eggs
-1 tablespoon of oil & 1/2 teaspoon of sesame oil
-1L of chicken stock (or any stock of your choice)
-1 tablespoon of fish sauce
-Salt and white pepper
Serves 4 people. Enjoy!
