Hot Dog Buns (ingredients for 12 5-inch-long buns)
1/3 cup warm water (110-115°F)
2 1/4 teaspoons active dry yeast
1 1/2 tablespoons sugar
1 cup lukewarm milk (scalded then cooled)
2 tablespoons non-fat instant milk powder
1 1/2 tablespoons shortening or softened butter (not melted)
1 1/2 teaspoons salt
498 grams (3 1/2 cups scooped and leveled) all-purpose flour
Egg wash for brushing (1 egg beaten with 1-2 teaspoons water)
Melted butter for brushing
Bake at 400°F until deep golden brown -- 15-20 minutes
