Using fresh flour milled at home can be very different to using flour bought from the store. In this video I compare two different single variety grains (Holdfast and Yeoman) to show you how different fresh flour can be from one batch to the next too. With each ne batch of grains you will need to experiment to see how much water your dough will need.
