Today I want to share another Korean sweet potato dish. It’s Korean sweet potato noodle dish with lots of colorful vegetables. I hope you can try this recipe and enjoy. It is really easy to make. Japchae is frequently associated with family gatherings and holidays. But this healthy Korean sweet potato noodle dish can be enjoyed anytime of the year.
Ingredients:
1/2 onion, thinly sliced
1 carrot, julienned
1/2 red bell pepper, julienned
5 shiitake mushrooms, thinly sliced
6 oz chives, chopped into 2.5 inch long pieces, remove the white part
7 oz dried Korean sweet potato noodles, cook in boiling water for about 8 minutes
*You can use spinach or green bell pepper for green vegetable.
*Stir fry all the vegetables over medium high heat for about 3 minutes and season with salt.
*Do not rinse the cooked noodle with cold water.
*Japchae still tastes great the following day. Just stir fry again until they are warm.
*if you are not vegetarian, you can use any protein of your choice.
Sauce:
3 tbsp low sodium soy sauce
2 tbsp sugar
2 tbsp sesame oil
1 tbsp sesame seeds
2 tbsp Mirim
1/2 tbsp oyster sauce (you can use vegan oyster sauce)
1/2 tbsp minced garlic
1/4 tsp black pepper powder
