How to Cook Authentic Pinakbet Ilocano - No Meat - Awan Sagpaw

It is special day today, first harvest of our ampalaya this year. We would like to mark this ocassion by cooking Authentic Ilocano Pinakbet (meatless farm version).
This authentic Ilocano Pinakbet or one Pot Ilocano Pinakbet is very easy to make, just put all the ingredients inside the pot and you're good to go in less than 15mins!!! NO guidance necessary, and for this farm version, it is meatless. Vegetarians rejoice. Enjoy!!

Ingredients
600-700 grams eggplant
300-400 grams ampalaya (bitter gourd)
4 cloves garlic
1 onion
thumb size ginger
250 grams tomatoes
1/4 cup boneless bagoong Pangasinan
