Chickpea Stew / Potaje de Garbanzos: To some it is a stew. To others a soup. Whatever you choose to call it, it's delicious - and simple to make! This yummy and hearty chickpea stew / soup will check the box on many different levels. It's comforting, filling and a very inexpensive meal to make!

This easy food recipe makes a great weeknight meal option. Pair it with rice, crusty bread, crackers or add potatoes to the recipe (when you add your squash) and make it a one pot meal. Or... you can simply eat it as is. It's so good, and the chorizo is yummy. The pork hock has a little meat on it too! Whatever you choose to do, you'll be loving this recipe.

Prep Tip - I like to buy smoked pork hock in larger quantities, since it is not an item that's consistently found in supermarkets up where we live. I usually have to drive down to South Florida to get some! Since I have to freeze them, I slice the quantity of chorizo I need per bean/pea meal and toss that into a vacuum sealed freezer bag with a piece of pork hock. That way, when I'm ready to cook, I just grab a baggie and toss in the meat portion of the recipe into the pot. It helps also with cleanup since chorizo can be an oily mess that stains cutting boards!

Chorizo (dry sausage) (2), sliced *Amazon link below
Piece Butternut Squash or Calabaza

For Sofrito
Small Yellow (or Spanish) onion, Chopped (1)
Garlic Cloves (about 7), minced
Tomato Paste (1 heaping tbsp)
Medium Tomato, chopped (1/2)
Bell Pepper (1/2 cup), diced
Oregano, Cumin and Salt (1 3/4 tsp)
Sazon Goya (1 Packet)
Garlic Powder (1 tbsp)
Crushed Red Pepper (pinch)
Bay Leaves (2)
