Ingredients:
PIE CRUST:
2 1/2 All purpose flour
1/2 tsp. salt
1 tbsp. granulated sugar (optional)
2 sticks butter (chilled or frozen)
6-7 tbsp. iced water
1 tbsp. apple cider vinegar
PIE FILLING
1 can 15 oz. peaches or 2-3 pieces medium size peaches
1 can 15 oz sliced mango or 2-3 pieces medium size ripe mangoes.
1/2 cup granulated sugar
1- 1 1/2 tsp. cinnamon powder
1/2 cup water
3 tsp. vanilla
2 tbsp. water for cornstarch slurry
PROCEDURE:
1. For the pie dough, If using food processor just combine all dry ingredients and pulse to mix all dry ingredients, add the frozen butter(great or chop into small pieces or slice butter and chill, it should be super cold) pulse until the consistency is crumbly or sandy, then add the liquid ingredients and pulse for couple of seconds do not overmix.
-lightly knead until the dough comes together and form into a disc, divide the dough into two wrap using a plastic food wrap and then chill at least 20 mins before use. This is the same procedure when using a stand mixer.
*if using by hand, combine all dry ingredients in a bowl, mix, add the cold butter and use a pastry cutter to combine and then add the liquid ingredients, using clean hand, mix and knead until dough comes together.
2. For the pie filling, mix all ingredients in a sauce pan, bring to a boil, lower the heat, add cornstarch slurry(mix together cornstarch and water) and simmer for 5 minutes or until it thickens. let the pie filling cool.
3. To assemble pie, roll and knead bottom crust for a 9 inch pie pan. then do the same for the top dough/crust. set aside.
-Pour and spread pie filing then lay the top crust/dough, tuck or crimp sides, put some pie vents and brush with egg. Bake in a preheated oven(350f) for 45mins. to 50 mins.
*Adding apple cider vinegar softens gluten in the flour preventing the crust getting tough and chewy.
*Doing egg wash on pies before baking gives the pie a golden yellow color after baking.
