Presenting my favorite recipe for dhaba style egg dal tadka. A roadside favorite usually enjoyed with hot phulkas and onions, this recipe really takes me back to my childhood. Road trips to upper Assam usually went for upto 8 hours with multiple stops. And those roadside dhabas served the most delicious food for travellers. This egg dal tarka is my most favorite dal recipe. Try it and it will take you back to those golden days, I promise!

Ingredients
1 cup green moong dal, soaked overnight
2.5 cups water to boil the soaked dal
1 tso salt
Pressure cook for 4 whistles
3 tbsp mustard oil
2 dried green chillies
1 bay leaf
1/2 cup finely chopped onions
1 tbsp fresh ginger garlic paste
1/2 cup tomatoes
1 tsp coriander powder
1 tsp cumin powder
1 tsp red chilli powder
Salt to taste
1/2 tsp turmeric powder
1/4 cup hot water
1/4 tsp garam masala
1 tbsp Kasuri methi
2 eggs
For the tadka:
2 tbsp ghee
1 dried red chilli
1/2 tsp heeng/asafoetida
2 tbsp chopped garlic
1/2 tsp Kashmiri red chilli powder
