“Crema di Limoncello” – Limoncello Cream Liquor
Ingredients
• 5 organic lemons
• 500 ml (about 2 cups) 190 proof alcohol (i.e.90%)
• 1 – 3 vanilla beans
• 400 ml (13 ½ oz) heavy cream (35% cream is preferred)
• 600 ml (20 ¼ oz) milk (0%, 1%, 2%, or 3 1/4%)
• 800 grams (28.2 oz) white sugar
Process
• Remove just the yellow skin/rind from the lemon, avoid the white pith
• Place skins in a large wide mouth jar (or similar) and add the vanilla bean(s) and the alcohol. Cover tightly and let rest in a dark place for 30 – 40 days (shake it periodically)
• After 30 – 40 days, make your crema, but adding the milk, cream and sugar to a pot, mix to combine and bring to a boil. Then let cool completely.
• Strain your alcohol through a screen and add it to your crema. Stir to combine.
• You can now bottle your crema di limoncello liquor and place bottles in a fridge or freezer for 3 weeks
