Infusion Process:
The infusion process of Averna is as fascinating and unique as its rich taste and aroma. It has always been infused in Sicily and will remain there to maintain the Sicilian root.
Ingredient selection:
Following the original recipe of the monks of the Abbey of the Holy Spirit, the process starts by skillfully combining herbs, roots and natural spices with perfumes and fragrances of Sicilian citrus.
Infusion:
All ingredients including essential oils from lemon and orange peels, pomegranate, herbs and fruits are selected with care, weighed and ground, and lastly, carefully mixed and infused with pure alcohol. After a lengthy infusion period, the liquid is mixed with water to bring it to the right alcohol content. It is then filtered and mixed with additional natural ingredients such as sugar, alcohol and water.
Maturation:
The product is then left inside vats in the cellar until all ingredients are thoroughly blended. Once the perfect intensity of taste and smell is reached, Amaro Averna is ready to be bottled and enjoyed worldwide.
Tasting Notes:
Velvety on the palate and balanced in the mouth, Averna is still produced following the original secret recipe.
