MAHI QALIYA WRITTEN RECIPE :
Ingredients :
Fish pieces 1 kg
Cumin seeds ½ tsp
Curry leaves 15
Ginger garlic 2 tbsp
Brown Onion paste ½ cup
Sesame seeds roasted &ground 2 tbsp
Peanuts roasted & ground 2 tbsp
Coconut roasted & ground 2 tbsp
Chili powder 2 tsp
Turmeric ½ tsp
Almonds ground 2 tsp
Tamarind juice ¼ cup
Allspice ½ tsp
Roasted chickpeas ground 1 tbsp
Coriander powder 2 tsp
Salt 1 ½ tsp
Oil ½ cup
METHOD:
Heat oil, add curry leaves, cumin seeds with ginger garlic paste, and ¼ cup water, add all the roasted and grounded seasonings with chili powder, haldi, dhania powder, and all the rest, add fish pieces, fry for 5 mins, add 1 ½ cup water, cover and cook till fish tender, lastly add tamarind juice, cook for 5 mins, serve garnished with coriander leaves, serve with rice.
GALAWATI GINGER CHICKEN WRITTEN RECIPE :
Ingredients :
Chicken (pieces) 1 kg
Ginger grounded 1 tbsp
Garlic 1 tsp
Chili powder 1 ½ tsp
Raw papaya 1 tbsp
Salt 1 tsp
Oil ¼ cup
Thick curd ½ cup
Allspice 1 tsp
Lemon juice 2 tbsp
Roasted and crushed coriander 1 ½ tsp
Roasted and crushed cumin 1 tsp
METHOD :
Marinate the chicken with all the above for 1 hour, bake or steam for half an hour, give dum of coal, BBQ, or deep fry, and serve with onion rings, tomato slices, and lemon wedges.
