IRISH POT ROASTED BEEF WITH SHALLOTS

Hi guys, welcome to Marks Home Kitchen, where i cook family friendly meals the everyone can enjoy. Todays video is for a one pot roasted beef with shallots. This dish is cooked long and slow in the oven and served with the gravy from the pan with one added special ingredient.
INGREDIENTS
2 tbsp olive oil
1.4kg silverside or slow roasting joint of beef
20 shallots peeled
4 garlic cloves
2 sprigs rosemary
2 bay leaves
350mls full bodied red wine
300mks good beef stock
3 tbsp tomato puree
1 tbsp honey
METHOD
Heat the oven to 150c
Heat the oil in a large casserole dish and fry the beef on high heat on all side for 3-4 minutes until the outside is golden brown
Lift out the beef and set to the side
Add the shallots to the casserole dish and cook for 5 minutes, turning occasionally
Stir in the garlic and cook for a further 2 minutes
Return the beef to the dish and add the stock and red wine
Stir in the tomato puree, rosemary and bay leaves until well mixed
Bring back to the boil and bake for 4-5 hours depending on the beef joint, until its cooked and tender
Remove the beef from the casserole dish and place, covered to rest for 30 minutes
Remove the rosemary and bay leaves from the sauce
Stir in the honey and reduce the sauce by half
Serve with mixed vegetables and boiled potatoes.
