This quick and easy #vegan mixed vegetable curry is a perfect healthy balance of nutritious diet. Its an Indian and Pakistani style curry an absolutely delicious. I used frozen mix vegetables from #Sainsbury’s. It has Peas, Sweetcorn, Carrot, Broccoli, Red Pepper.

Ingredients
Potatoes medium 2
1/2 kg Frozen Vegetables ( 2, 1/2 Mugs or 4 Cups of Vegetables)
1/2 Onion finely sliced
2 Tomatoes chopped
1 tsp Salt
1 tsp Red Chilli Powder
1/4 tsp Turmeric
1/2 tsp Ginger Garlic paste
Few Green Chillies
2 tbs Fresh Coriander
1 tsp chopped Ginger
1/2 Cup Extra Virgin Olive Oil
Recipe for Mix Frozen Vegetables Curry
In a large pan add extra virgin olive oil, when oil warm up add sliced onion and fry till slightly golden brown. Add ginger, garlic paste, fry for few seconds, add chopped tomatoes and cook until tomatoes softened, than all the powdered spices. Cook till oil separates from pan.
Now add frozen vegetables and cook until half done. You won’t need to add any water as vegetables has its on water. Add potatoes and cook on law heat till potatoes are done.
When mix vegetables are cooked, add chopped green chillies, chopped ginger and fresh coriander.
Put the lid on for two minutes to release aroma from green chillies, ginger & coriander.
Absolutely delicious and mouth watering Mix vegetable curry is ready to serve.
This quantity of curry is sufficient for 4 people.
