Kulich is a traditional Easter bread made for Russian Orthodox Easter.
Very popular in Ukraine and I believe they call it Paska.
It is very similar in texture to Italian Panettone and the one I am making today will look like Chocolate Babka.
You will need:
400 g flour
100 g sugar
100 ml milk(warm but not hot)
100 g butter(melted and cooled to room temperature)
2 egg yolks and 1 whole egg
4 g salt( about 1 tsp)
8 g active dry yeast( about 1 tbsp)
4 g vanilla powder or vanilla sugar (about 1 tsp)
200 g Hazelnut spread ( about 1 cup)
Method:
Sift flour and salt.
Activate yeast by adding it to warm milk. Add 1 tbsp of sugar from whole amount and set aside for 10 min. When you see foam hat forms, the yeast is active and ready to use.
In a medium mixing bowl beat egg with sugar until pale yellow( about 5 minutes)
In a bow of a stand up mixer add: sifted flour with salt, egg mixture, melted butter, sugar, vanilla and milk with activated yeast.
Using dough hook attachment start kneading the dough for about 10 minutes until smooth and not sticky.
Place dough on a floured surface and knead for another 5 minutes.
Place in a bowl, cover and let rise in warm place for couple hours until doubled in size.
Roll out the dough into rectangular shape and 2 mm thin.
Spread with hazelnut spread.( To make it more spreadable, microwave it for 30 sec)
From long side of the dough start rolling into a snake.
Tuck ends.
Cut lengthwise(not all the way to the end) and roll it into circle with layers showing up.
transfer into a buttered baking form.
cover and let raise in the form for another hour.
Preheat oven to 390°F(200°C)
Bake your bread for 50-60 minutes.
You can check readiness by inserting tooth pick in the middle of the bread and if it comes out clean, your Kulich is ready!
Let cool a little bit and then you can sprinkle it with powdered sugar.
