A meat free Tikka Masala for Veganuary that feeds 4 people for next to nowt. You won't be disappointed with the flavours in this curry with my tried and tested spice mix, the creamy cannellini beans and the sweet peppers. It's better than a takeaway in my opinion and looks as pretty as a picture. Not as pretty as the pictures of me in my leopard skin underpants but pretty nonetheless.
Vegan Tikka Masala recipe (feeds 4)
2 large peppers
1 medium onion
1 tbsp minced garlic
3 heaped tsps curry powder
3 heaped tsps coriander powder
1 heaped tsp cumin
1 heaped tsp garam masala powder
1 tsp salt plus extra to taste
Half a tsp pepper
150ml water
125g tomato puree
200g coconut milk
1 tbsp lemon or lime juice
25g finely grated ginger
3-400ml vegetable stock or as needed
50g refined coconut oil
500g cannellini beans
Chilli of choice (optional)
Fresh herbs to finish
