Carrot Rice Recipe:
Raw Rice - 1 ½ Cups
Oil - 2 tbsp
Mustard - ½ tsp
Cumin Seeds - ½ tsp
Dry Red Chilli - 3 nos
Curry Leaves - 2 Sprigs
Cashew Nuts (broken) - 10 nos
Onion (finely chopped) - 2 nos
Ginger Garlic Paste - 2 tsp
Turmeric Powder - ¼ tsp
Carrot (grated) - 4 nos
Water - 4 ½ Cups
Salt - 1 ½ tsp
Coriander Leaves (finely chopped) - 2 tbsp + for garnish
Instructions:
1. Wash and soak the rice for 20 minutes
2. Heat a cooker, add oil
3. Add mustard, cumin seeds, dry red chillies, curry leaves and let it crackle.
4. Add the cashew nuts and saute for a few seconds
5. Add the chopped onions and saute till it turns translucent
6. Add ginger garlic paste and saute for a few seconds
7. Add turmeric powder and the grated carrots and mix well for 2-3 minutes
8. Add water and salt. Mix well and bring it to a boil
9. Add the soaked and strained rice.
10. Cover and pressure cook for 4 whistles.
11. Turn off the flame and let the steam reduce gradually.
12. Open the cooker, fluff the rice and serve it hot.
