This Chicken Fried Rice on the griddle was an awesome 2nd cook on the new Pit Boss Ultimate Griddle. Everything you want out of a fried rice recipe... cheap, easy, and a great way to feed a crowd!
For chicken fried rice or any fried rice recipe, it's best to make your rice the day before and refrigerate it overnight. We like to use Jasmine rice, and we cook it to the package instructions.
Then, start by cutting your chicken breasts into chunks and adding it to the griddle. Cook on the first side for a few minutes without touching it so that you develop a good crust/brown bits.
We added frozen peas, diced carrots, diced onions, and three eggs to our fried rice. For the sauce/seasoning, we used soy sauce, oyster sauce, minced garlic, sesame oil, and pepper. I didn't use any added salt in the dish, because the soy sauce already has a high salt content.
