In 30 minutes you will have a carrot ginger soup that is creamy and satisfying!
If you want to keep it gluten-free, make sure you use a vegetable broth that is 100% natural with no "natural flavor" added and no hydrolyzed vegetable proteins. I LOVE Pacific brand, but I'm sure there are others that keep it real.
I found that by adding some pine nuts (about 1/4 cup) in the blending process, I could add calories and creaminess. this was really helpful when going through my cancer treatment.
