Best tigelle (crescentine) recipe
The Tigelle or Crescentine are scones typical of the Italian cuisine in particular of the city of Modena. Made with a mixture of flour, water, yeast, lard which once leavened (hence the name crescentine = “growing”); it is first spread, then carved into circles which are finally cooked in the special tigelliera (terracotta discs or refractory stone, formerly called Tigella, hence the other name) or tigelle press (tigelliera in Italian) in a pan; where they take on an appearance similar to Piadine but thicker and fluffier, therefore also ideal to be cut in half and stuffed with meats and cheeses! Like any traditional recipe, there are small variations that can make a difference. Today I give you the original recipe of the Tigelle a little lighter, replacing the lard with unsweetened white yogurt. It is quick and easy to prepare. The dough is made by hand without difficulty. For the realization you can use a glass or a simple 10 cm pasta bowl. If you do not have the tigelli plate a non-stick pan. In a few minutes they will come like the originals! Scented, soft, fragrant, Crescentine are perfect to use instead of bread, therefore to accompany dishes of all kinds, but also ideal as a single dish, buffet but also for snacks filled with cold cuts, cheeses; also try them with Nutella ... they are also delicious in this sweet version!
I who live near Modena very often go out to dinner with my friends and we have a dinner based on tigelle; they are served in a basket and cold cuts, cheeses, vegetables and the inevitable, as I said before, Nutella are brought to the table. Now let's see how to prepare tigelle in a few easy steps.
Ingredients:
450 g of flour
250 g of white yogurt (unsweetened)
40 ml of water
15 g of instant power baking (I use Paneangeli Baking Powder for Baking Pizza, you can find it also on amazon)
1 small teaspoon of salt
For stuffing inside the tigelle:
prosciutto, mortadella, salame, cheese (gongorzola, stracchino), Pesto Modenese (a delicious spread made with lard, garlic and rosemary), Nutella
Method:
In a bowl, put the flour, the salt, and the instant power baking for savory pie. Mix it. Form a hole in the middle and add the yogurt and the water.
Mix it with a fork at the beginning, then knead.
Move the dough on a working plan (if necessary add a drop of water). Keep kneading until you obtain an homogenous dough. Form a dough ball and keep it on the working plan for 10 minutes to rest.
Flour the working plan and with a rolling pean, spread the dough (it should be 1 cm thick).
With a glass, form small circles of dough (you should obtain around 12 small tigelle).
Warm a pan on the fire. Once the pan is hot, low the heat and pose the tigelle. Cook 5 minutes in each side (cover the pan while cooking).
Your tigelle are ready! I suggest you eating them when they are still warm. You can fill them with sliced cured meat, cheese like gongorzola or stracchino and vegetables like rocket. Try them also with Nutella! @mammamiachebuono1717
