OLD SCHOOL ROASTED CHICKEN
This is the recipe I use for my old school chicken salad and OLD SCHOOL chicken stock ( I use the bones )
This is the perfect way to roast a chicken
It will come out juicy and flavorful every time
Recipe
1 whole chicken (3 pound bird )
1 sliced lemon
Salt and pepper
1 cup chopped onions
1 cup chopped celery
Place chicken in baking dish or pan
Cover chicken with olive oil and season with salt and pepper
Fill cavity of chicken with onions and celery
Add remaining onions and celery around pan
Add 1 cup water to pan and place in oven for 30 minutes on 400 degrees
After 30 reduce temperature to 350/375 and cook for 30-45 more minutes until temp is 165 degrees
Baste chicken with juices in pan every 30 minutes
