Mutton curry is a flavorful dish that is slow-cooked to perfection, allowing the spices to meld together and the meat to become tender. Here's a traditional slow-cooked mutton recipe:

Cook Time - 2 hours 10 minutes (Slow cook)

Ingredients
For Marination
a. 500 GM Mutton
b. 2 med-size sliced onions
c. 1 tbsp crushed garlic
d. 1 tbsp crushed ginger
d. Some coriander stems
e. 1 tbsp kasuri methi
f. 2 sliced green chili
g. 1/4 cup curd
f. 1/4 tsp turmeric powder
g. 1 tsp coriander powder
h. 1/4 tsp cumin powder
i. 1/2 tsp garam masala
j. 1 tsp kashmiri chili powder
k. 1/2 tsp red chili powder
l. Salt to taste
m. 1 tbsp mustard oil
Gravy Preparation
1/4 cup mustard oil
6 red chili whole
some stone flower
3 to 4 cloves
1/2 tsp black pepper whole
3 green cardamom
2 black cardamom
2 inch cinnamon
2 bay leaf
2 medium-sized sliced onions
2 garlic head
2 cups water
Salt to taste
Freshly chopped coriander leaves
Instructions
1. In a large pot marinate Mutton with given ingredients from a to m and refrigerate for 1 to 2 hours.
2. heat a pot and add 1/4 cup mustard oil.
3. Once the oil is hot, add black cardamom pods, green cardamom pods, black pepper whole, cloves, cinnamon sticks, red chili whole, some stone flowers, and bay leaves. Saute for 10 seconds on low flame.
4. Add sliced onions and saute until they turn golden brown.
5. Add marinated mutton to the masala and mix until they are well coated.
6. Add 2 garlic heads to enhance the taste.
7. Saute for 5 minutes on high flame.
8. After 5 minutes cover and cook for 20 to 25 minutes on low flame, check in between.
9. After 25 minutes, add 2 cups water and bring to a boil on a high flame.
10. At this stage, if you want to cook in a pressure cooker then add 1.5 cups of water and give 3 to 4 whistles on low flame.
11. When it boils, then lower the flame and cook for one and a half hours on low flame, or until the mutton is tender.
12. Stir occasionally and add water if necessary.
13. Garnish with fresh coriander leaves.
Serve hot with rice or roti
