Vegan Coffee & Walnut Cake: [ Ссылка ]
This vegan beer bread with extra mature vegan cheese is such a breeze to make. It uses baking powder for lift, so there's no need to wait around for yeast to rise or dough to prove. The texture of the bread is surprisingly light, but also has a nice chew to it, and the added walnuts give a lovely bit of crunch. For me, I think the amount of cheese needs to be doubled to get a deeper flavour but that's just my preference; feel free to play around with the quantities of the base ingredients (flour, beer, baking powder) the same.
I did attempt a gluten free version, but it was a spectacular fail, as you'll see in the video! All is not lost though, I'm going to try and turn the failed loaf into some crackers. My plan is take a few pictures when I do it, and I'll share that in a post in my Community tab, so be sure to have a look there (hoping to have this done by July 14 '24)

Cheddar Beer Bread Ingredients:
450g (3 cups) Self-Raising Flour*
1 tsp Granulated Sugar
½ tsp Salt (I might try it with 1 tsp next time)
1 tsp Baking Powder**
140g (1½ cups) Grated Extra Mature Vegan Cheddar (I’d double this quantity for better flavour)
3 tbl Vegan Butter
60g (½ cup) Walnut Pieces (toasted)
340ml (12oz) Vegan India Pale Ale
2½ tbl Vegan Butter (melted)
1 tsp Minced Garlic
1 tsp Minced Parsley
Gluten Free Variation Ingredients: ** Be aware; this did not rise so I’m going to turn it into crackers**
455g (3 cups) Plain Gluten Free Flour
1 tsp Granulated Sugar
½ tsp Salt
1 tbl Baking Powder
1 tbl Ground Flax Seeds (linseeds)
140g (1½ cups) Grated Extra Mature Vegan Cheddar
3 tbl Vegan Butter
60g (½ cup) Walnut Pieces (toasted)
340ml (12oz) Vegan Lager
Marmite Butter Ingredients:

3 tbl Vegan Butter (softened)
1 tbl Marmite (softened)
*use plain flour if you have it, and add 1 tablespoon baking powder
**not needed if you know your self-raising flour is fairly fresh

My channel is you watching the results of my 2am thoughts of “I wonder what would happen if I put A with B?” The answers lean heavily towards cake, and my ongoing quest to find a good meat substitute. I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
