Pita Bread is a popular flatbread famous for its hollow shape and versatility. In this video, I will show you the secret to get all of your pitas to inflate. If you follow my instructions, you'll never make flat pitas again.
FORMULA:
500 g [1,1 lbs] all-purpose flour (100%)
300 g [10,5 oz] whole milk (60%)
25 g [0,9 oz] extra virgin olive oil (5%)
20 g [0,7 oz] granulated sugar (4%)
15 g [0,5 oz] fresh yeast (3%) OR 5 g [0,2 oz] instant dry yeast
8 g [0,3 oz] fine salt (1,6%)
T = 173,6%
PROCEDURE:
1 - Dissolve the sugar in the milk and heat it up until lukewarm;
2 - Weigh salt and flour, mix to aerate and incorporate;
3 - Make a well in the flour and salt mixture and add the olive oil;
4 - Add the sugar and milk mixture, break up the yeast block or add the dry yeast;
5 - Mix with spoon, incorporate with hands and then knead it without adding any additional flour whatsoever;
6 - Divide the dough into 12 pieces of approximately 70 grams (2.5 oz) each or into 8 pieces of approximately 110 grams (4 oz);
7 - Shape balls out of pieces of dough and allow them to ferment on a clean baking sheet covered with moist kitchen towel until they have doubled in size;
8 - Prepare two plates, and one clean kitchen towel that doesn’t have any laundry smells on it;
9 - Roll each dough ball with a rolling pin and bench flour (or with hands) until they are 15 cm (6 inches) in diameter and transfer each disc onto the clean plate, and repeat, pilling one on top of each other;
10 - As you finish rolling, turn the pile of uncooked pitas over, this is done so that the first one that was rolled is also the first one to be cooked;
11 - Cook the pitas on cast iron skillet preheated on medium-low heat for around 5 minutes or until you can smell the metal, turning them every 15 seconds or so and pressing lightly with a spatula;
12 - Transfer pitas, still hot, onto plate covered with towel and keep them covered.
NOTES:
1 - It is possible to use other oils;
2 - It is possible to use water instead of milk, but your pitas won’t come out as soft;
3 - It is possible to add the sugar with the dry ingredients and heat up the milk only;
4 - If using instant dry yeast, add one additional tablespoon of milk to the recipe amount. No need to bloom or ‘feed’ the yeast, just add it to the mixture as shown in the video.
5 - Before fermentation, in case you live in a hot and/or dry place, spritz the dough balls with water before covering with kitchen towel, or cover with cling film;
6 - In the event of wanting to divide the dough into 8 pieces, roll each of them out to approximately 18 cm (7 inches);
7 - For easier handling of dough, you can roll half, cook, and then repeat;
If you’re worried about the discs sticking, you can layer a piece of parchment paper between each disc, but with me that has happened only a few times;
8 - Cast iron skillet should not be smoking when cooking the pitas;
9 - If you don’t have a cast iron skillet, you can use other skillets, of course, but the thinner they are, the less time they take to heat up;
10 - In case of wanting to bake the pitas, heat up your oven at its highest temperature for at least 15 minutes, then place the discs onto a baking sheet (which doesn’t have to be hot) and bake them until inflated. Remove them from the oven as soon as they inflate, to prevent them becoming dry. They should remain pale;
11 - Cooked pitas can be frozen, separated by parchment paper. They keep for 3 months. In order to reheat them, simply put them in the microwave for around 30 seconds or until soft and warm. Alternatively, you can allow them to thaw at room temperature and heat them up in a hot skillet, although they may dry up that way;
12 - Formula may be divided or multiplied with no problem.
