Deb’s Chicken Curry with Pastry 🥐🩶
The secret to a man’s heart they say is through his stomach. I think this dish is one of the reasons my hubby and I are still married 😂 Food is powerful!! This is one of my hubby’s favorite meals that I made for him when we first got married. We are suckers for Indian food and spicy foods and this one brings back memories but it’s our absolute comfort foods especially now that weather is getting colder, curl up on the couch with a big bowl of this scrumptious bowl and it will comfort your soul 😋

Recipe 🔽
* 3 Tbsp Olive Oil
* 2 Onions 🧅 Diced
* 1 Potato 🥔 diced
* 1 Bunch Coriander chopped including stems
* 2 Garlic Cloves crushed 🧄
* 1 tbsp Crushed Ginger 🫚
* Salt and pepper
* 1 tsp Garam Masala Powder
* 1 tsp Turmeric powder
* 1 tsp Chili 🌶️ powder
* 1 tsp Cumin powder
* 1 tsp Curry powder
* 1 tsp Ginger powder
* 3 Chicken Breasts sliced thinly
* 1 Red Capsicum chopped in large dices
* 1 Can Chic Peas drained
* 1 Large Coconut 🥥 milk
* 1/2 Cup Tomato Pasata
* 2 Tbsp Honey 🍯
For the Pastry Filling
* 1/4 Cup Arborio Rice
* 1 tbsp Coriander
* 1/4 Tsp Stock Powder
* Puff pastry 3 sheets
On Medium heat In a large pot add Oil, Onions, Garlic, Ginger and Coriander Roots and fry for 2 minutes. Add potato and fry for another minute. Add all dried spices and let them fry. Cook off letting all the beautiful aromas release. Add more oil if too dry. Add chicken and fry off till completely covered with spices. Add Capsicum, Chic Peas, Tomato Pasata, Honey and coconut milk. Cook for 20-30 minutes until everything is nicely softened and cooked through. When you turn heat off fold through some fresh coriander.
For the Pastry Filling
In a small pot on medium heat add 1 tbsp olive, add Arborio rice, coriander leaves, stock powder and 1/2 cup hot boiling water. Mix and cook until rice is cooked through mixing often. Keep adding hot water until it looks like a risotto. Set aside until slightly cooled.
For the pastry defrost 3 sheets and cut each sheet into 4 squares. In each square add 1 heap tsp of the rice mixture into the middle of pastry. Fold over making a triangle, using a fork press the sides gluing them together. Place on a lined baking tray and repeat. Brush each triangle with butter and bake in oven on 180c Fan Forced for 20 minutes or until pastry is golden and crispy.
Now add pastry to a plate add Curry on top and sprinkle with fresh coriander, add a dollop of yogurt if you like.
