I created my first low carb cookie recipe...and they taste amazing.
These are the best Keto Low Carb Brown Butter Cowboy Cookies you will ever make. They are soft and chewy, infused with a nutty brown butter, and loaded with a variety of flavors and textures. By browning butter, it adds depth and richness to these cookies but if you're in a pinch you can also microwave the butter. This cookie dough is also versatile and you may substitute any of the last three ingredients for any flavor of your choice.
Yields 12 cookies (standard cookie scoop)
INGREDIENTS
1/2 cup (113g) unsalted butter
1 cup (100g) blanched almond flour
1/4 teaspoon xanthan gum
1/4 teaspoon baking powder
1/4 teaspoon sea salt
1 large egg, room temperature
1/4 cup (50g) granulated Lakanto monk fruit or granulated erythritol
1 teaspoon vanilla extract
1/2 cup (40g) unsweetened coconut flakes
1/4 cup (30g) chopped pecans
1/2 cup (90g) unsweetened chocolate chunks/ chips
You can prep brown butter in advance to save time.
Remember to gently flatten cookie before baking. This cookie dough does not spread while baking.
Preheat oven to Convection Bake at 325F OR 163C for 13-15 minutes or until edges are golden brown.
Let cookies cool for at least 20 minutes before devouring.
