MAVADU OORUGAI
1) VADU OR SMALL RAW MANGO - 1 1/2 KILOGRAM
2) SALT - 1 1/2 CUP
3) RED CHILLI POWDER -100GM
4)MUSTARD - 100GM ( POWDERED MUSTARD)
5) CASTOR OIL- 2 TABLE SPOONS.
6)TURMERIC POWDER -100GM
METHOD
1) WASH AND SHADE DRY THE RAW MANGO. THE RAW MANGO SHOULD BE WATER FREE
2) TAKE A LARGE BOWL AND ADD THE RAW MANGO AND ADD 2 TBSPS OF CASTOR OIL, AND MIX VERY WELL WITH A WOODEN SPATULA OR SHAKE THE BOWL CONTINUOUSLY TILL OIL SPREADS WITH THE VADU.
3) ADD IN THE SALT AND MIX IT WELL IN THE SAME PROCEDURE.
4) KEEP THE MIXTURE CLOSED AIRTIGHT FOR 4 DAYS.
5) AFTER 4 DAYS VADU SHOULD HAVE LEFT WATER. THIS IS THE RIGHT STAGE TO ADD THE SPICES POWDER. COMBINE ALL THE SPICES ALONG WITH THE VADUS IN THE SAME PROCEDURE.
6) MAAVADU OR VADU MANGA IS READY TO BE SERVED WITH CURD RICE.
