Pre heat oven to 160C/320F
Ingredients:
1.8 kg lamb shoulder bone in
500ml chicken stock
2 brown onions
4 garlic cloves
Fresh thyme
11/2 tsp coriander seeds
Salt
Olive oil
Horseradish Mustard seed mayo
1 egg
180ml avocado oil
1 tbsp horseradish
1 tsp dijon mustard
1 tbsp wholegrain mustard or Bavarian mustard
Salt
Pepper
15ml vinegar
Apple and Pear Slaw
1/2 apple
1/2 just under ripe pear
1 cup white cabbage
Salt
Peper
2 tsp apple cider vinegar
6 mint leaves
