This delicious curry chicken pot pie is a great Caribbean rendition of a classic American favorite. You can use my gluten-free vegan chicken recipe as well as a gluten-free pie crust to make this completely gluten-free If you choose to leave out the curry powder be sure to season the pot pie with some fresh herbs for that classic flavor. 1c Carrots (peeled halved, sliced on bias)
1/2c White Onion (small chopped)
