It is usually prepared a day or two in advance so that the spices are well absorbed into the meat for a robust and delicious flavour! Sounds tough? You'll be pleasantly surprised at how simple this recipe is! Traditionally prepared for Christmas in most Goan homes, this spicy and flavourful dish is a must try!

Ingredients
Pork, with bone, cut into 1 inch squares- 1kg
Dry, Red Kashmiri chillies- 10
Cumin Seeds (Jeera)- 1/2 Tsp
Garlic- 8 cloves
Peppercorns- 6
Turmeric (Haldi) Powder- 1/2 Tsp
Cloves- 3
Cinnamon- 1/2 inch piece
Onions, chopped- 2 large
Goa vinegar- 1/2 cup + 1tbsp (or palm vinegar)
Salt- to taste
Sugar- 1.5 tsps
Vegetable Oil- 2-3 tbsp
Water- as needed
