Today I'm going to be pressure canning wild game meat. As a southern girl I like smoked pulled pork and to me there's no better way to do that then to smoke it low and slow. But today I'm on a mission. I'm not going to be just smoking this for a meal. I'm going to be canning this wild hog to make it shelf stable for long term food storage. My family tries to be self sufficient as possible and a huge part of that is to supply our own wild food and to make sure that we have a supply of that on hand. There is a lot of way to preserve wild game and canning meat is a great way to do that. It make it shelf stable so that no refrigeration is required. And when you can get it just the way you like it, well... that's just a win win in my book. Feral pigs are an abundant and great tasting alternative to farm raised pigs. Unfortunately many are wasted because of a bias against wild boar meat which is ridiculous.
