Don't want to throw out perfectly good lemon peel? Making lemonade is super quick and easy, but throwing out lemon peel is such a waste! Here is the recipe for my homemade lemonade and for preserving the left over lemon peel:
Lemonade:
Boil 1/2 cup of sugar (I used coconut sugar and 1-2 tbsp honey) with 1 cup of water. Pour into a glass pitcher, add one cup of lemon juice and four cups of water. Leave in fridge to cool for 1-2 hours before drinking.
Lemon peel preserve ingredients (for a 1 litre jar):
1 tsp of salt per lemon
2 cinnamon sticks
2 bay leaves
6 whole cloves
6 peppercorns
2 star anise
add lemon juice and/or oil to cover and fill jar to the top.
