Today I'm going to show you how to pipe realistic bubble bath flowers with a sugar-free bubble bath frosting recipe. The frosting behaves like gum paste & frosting at the same time… it's pretty incredible!
RECIPE: 100 grams baking soda, 75 grams corn starch, 15 grams meringue powder, 15 grams sodium lauryl sulfoacetate (SLSa), 55 grams liquid surfactant (cocamidopropyl betaine), 25 grams fragrance oil, 3 grams polysorbate 80, 1.5 grams preservative. *The corn starch gives the dough a gum paste consistency (to make the gorgeous ruffles on the flowers). To increase the SLSa, decrease baking soda for the same amount that you add. Meringue powder makes it dry harder/faster & stiffens up frosting. But I don’t know its effectiveness as I haven't done isolated experiments. Try cream of tartar or clay instead. Use any liquid surfactant (liquid bubble bath is also a great choice) to boost bubble power & stabilize the bubbles for more structure & longer lasting bubbles. I added a vanilla stabilizer to keep the dough from discoloring. I also added a preservative because I'm using colorants that contain water.
In mixing bowl, sieve dry ingredients together. Mix wet ingredients together separately. Mix dry ingredients on low & slowly add wet. Mix everything, then whip on high for a few minutes. Scrape bowl & mix once more. The frosting should be very thick but also soft & wet enough to be piped. *First, test that the dough is the correct piping consistency.*
ISSUES: If dough is too stiff/dry, add a little bit of liquid surfactant, mixing after each addition. If it's too soft/wet or the petals start to droop, melt, or merge together, add a little bit of dry powder (baking soda or SLSa), mixing after each addition. *Test the dough after each addition* The dough dries out over time. Add a little liquid until it's pipeable again. Once it’s the right consistency, divide & add color (liquid color mixes more evenly). Use 2 bags at once to reduce the chances of it ripping!
PIPING FLOWERS: Pipe the base; this determines height, shape, & how many rows of petals you can pipe. Pipe the first petal in a circle, then the first row of petals all the way around. Pipe each row just below the previous one. Start angling the tip more up & make the petals longer with each row. Keep piping until you're satisfied & the flower is finished.
PACKAGING: It takes a few weeks, maybe a month for the flowers to fully dry. They should last up to a year. The flowers are fragile so I recommend packaging them in a box. I'm so mad! I completely forgot about individual plastic containers that I have that would've been perfect! (linked below)
