Salt baked fish recipe...de-lic-ious!
Salt roasting, salt baking, salt crusted, whatever you want to call it is a delicious way to hold in all the flavours and juice from the fish you are cooking. Works equally well with salt crusted meat like chicken or lamb. This recipe works even better with a whole fish (whole salmon, trout, sea bass, etc.) If using a whole fish - no need to cure at the start. And once you crack open the salt shell simply peel away the fish skin to reveal the most tender and succulent flesh..!

INGREDIENTS:
1 large salmon fillet (big enough for two people - ideally use a whole fish with the skin on)
1 tablespoon of good quality maple syrup
Dry Cure:
1 cup of white sugar
1 cup of table salt
3 bay leaves
1 dry red chilli (medium heat)
1 star anise
1 clove
Add ground spice to salt/sugar mix
Salt Crust:
3 cups course salt
3 egg whites
Few turns black pepper mill
