Punjabi Mutton Masala is an authentic #MuttonCurry from Punjabi Cuisine. This #PunjabiMuttonMasala is made with aromatic spice powder, onions, tomato and tender mutton pieces. Punjabi Mutton Masala Recipe:
Masala:
Cloves - 5 nos
Black Cardamom - 2 nos
Coriander Seeds - 1 tbsp
Cinnamon - 2 inch
Cumin Seeds - 1 tbsp
Black Peppercorns - 1 tsp
Fennel Seeds - 1 tbsp
Gravy:
Mutton (curry cut) - ½ kg
Salt - 1 tsp + 1 tsp
Oil - 4 tbsp
Ghee - 1 tbsp
Onion (sliced) - 2 nos
Ginger Garlic Paste - 2 tbsp
Green Chilli (sliced) - 2 nos
Turmeric Powder - 1 tsp + ½ tsp
Red Chilli Powder - 1 tbsp
Coriander Powder - 2 tbsp
Cumin Powder - 1 tsp
Tomato (finely chopped) - 4 nos
Kasuri Methi - 1 tbsp
Lemon Juice - 1 tbsp
Coriander Leaves (chopped) - 2 tbsp
Water - 2 Cups + 1 Cup
Cooking Instructions:
1. Pressure cook the mutton for 7 whistles with 2 cups of water, 1 tsp of salt and ½ tsp of turmeric powder.
2. Roast the spices for the masala until aromatic and powder them in a mixer grinder.
3. Add ghee and oil to a kadhai and add the sliced onions. Brown them.
4. Add ginger-garlic paste and green chillies. Cook until the raw aroma goes.
5. Add the powdered spices and salt and cook on a low flame for 3 mins. Add ½ cup of water and cook until dry again.
6. Add the tomatoes and cook until completely soft.
7. Add a cup of water and further cook the tomatoes until thick.
8. Add the mutton and the water.
9. Simmer for 10 mins.
10. Finish with chopped coriander leaves, kasuri methi and lemon juice.
