Ingredients
Cooking Oil for frying
1 tsp Tapioca/ Corn Flour (to prevent oil from splashing)
200g of Salted Fish Bones (pre-soaked for 15 mins)
4 cups of Brinjal (Pre fry to retain it's colour)
2 cups of Pineapple
2 cups of Long Beans (Pre fry to retain it's colour)
1 pack of KARA coconut milk
Blended Chilli Paste (Refer below for recipe)
BABA's Curry Fish Powder
3 cups of Water
1/2 tbsp of Salt
1 tbsp of Sugar
Ingredients for Blended Chilli Paste
4 Stalks of Lemongrass
1/2 cup of Dried Chillies
6-7 pcs of Shallots
1 thumb size of Galangal
2 tbsp of Water
1 tbsp of Cooking Oil
Tasty Nyonya style curry cooked with Salted Fish Bones; a thrifty recipe which was very popular during the olden days. Cooked with varieties of greens and that's sufficient to make up a dish to feed the family. Serve it with a bowl of hot rice!
