This salad is surely a must try for the weight watchers. Loads of vegetables.
APPLE WALNUT SALAD
Ingredients
1 medium red apple
1 medium green apple
8-10 walnuts
¼ cup yogurt
1 tablespoon grainy mustard
Salt to taste
Crushed black peppercorns to taste
1 tablespoon olive oil
¼ cup shredded cabbage
¼ cup shredded purple cabbage
1 medium carrot, cut into strips
1-2 pink radish, cut into strips
2 tablespoons chopped celery
2 tablespoons dried cranberries
Method
1. Slice the apples and set aside.
2. Mix together yogurt, grainy mustard, salt, crushed peppercorns and olive oil in a bowl. Add cabbage, purple cabbage, carrot, radish, celery, cranberries, sliced apples and walnuts and mix well.
3. Serve immediately.
