Seared Pork Tenderloin! Medium Rare at 145 degrees!
Take a pork tenderloin and cut off about 2 inches from
each end of the tenderloin to square it up a little.
Trim off all the silver skin then season with pork rub.
Sear the meat in a hot pan with 1 to 1 and 1/2 tbsp. olive oil.
Place it on a oven rack and insert a meat thermometer that
has a cable the goes to the out side of the oven.
Set the thermometer alarm to 140 degrees. Remove from the
oven the moment the alarm goes off. Let it rest until the internal
meat temp goes past 145 degrees. Once the meat climbs to 145 let it rest for an additional 3 minutes... then slice the meat in 3/8 inch thick slices.
Serve topped with the sauce
Sauce...
Once you have seared the meat and while it is in the oven make
your sauce. Whisk the drippings loose from the pan and while
the pan is hot pour in 1/4 cup chicken broth, then 1/4 stick of butter, then 1/4 cup of heavy whipping cream, then 2 tbsp.
Dijon mustard, then 1/4 tsp. salt and 1/4 tsp. black pepper.
(What a great low-carb sauce you can use on everything!)
Thicken with a cornstarch slurry. That's 1 tbsp. water and 1 tbsp.
cornstarch mixed up then poured in. Add a bit more cream if it gets
to thick.
