Step-by-step recipe for Sooji halwa:
▪️Heat a pan and add some ghee to it. Add cashew nuts, chopped almonds and pistachios. Fry for few seconds. Add resins to it and fry them together for few seconds. Remove and keep aside.
▪️Add 1/2 cup ghee to the same pan. When ghee melts add 1/2 cup semolina to it.
Roast the semolina until it gets golden brown in colour and fragrant. Stir it continuously.
▪️Pour 1½ cup water gently. Stir constantly to avoid forming lumps. Cover it and cook for 1 minute until the water is absorbed completely to make halwa smooth.
▪️Add 1/2 cup sugar. Stir for 2 minutes, until the sugar dissolves and leaves the sides of the pan.
▪️Add saffron dissolved milk (Soak the saffron in about 1 tbsp warm milk for 10- 15 minutes) , 1/2 tsp crushed cardamom, roasted dry fruits and mix them. Keep stirring and cooking till you get the final texture.
▪️Garnish with more chopped dry fruits.
▪️Serve hot or warm.
