Ever wondered how a bowl of ramen or chicken rice can be so fragrant? This is what goes in to making that beautiful aroma. Bonus crispy chicken skin is our by-product.

Ingredients
4kg Chicken skins
30g Garlic, peeled
30g Ginger, split in half
Half a leek

Instructions
1. Gently heat chicken skin to render fat. It may take more than an hour for all the fat to render and the skin to get crispy
2. Once all the skin is crispy drain well and set aside to cool
3. Add remaining ingredients and turn off the heat after 30 minutes and let it all cool to room temperature
4. Season chicken skin while still hot but safe to touch
5. Strain the oil into an airtight, sealable container
