Per pergatitjen e rizotos kemi perdorur perberesit si me poshte:
- 1 gote oriz per risoto
- 2 kallamar
- 10-12 karkaleca
- 1 kokerr qepe
- karrote
- 1/2 gote vere te bardhe
- gjalp i fresket fshati
- djath parmezan
- vaj ulliri, kripe dhe piper
Si fillim bejme pergatitjen e buljonit. Eshte shume e rendesishme ta kemi gati kur te fillojme rizoton.
Per pergatitjen e buljonit kemi perdorur: kokat e karkalecave, qepe, karrote, majdanoz, kripe piper. I hedhim te gjitha ne nje ene me 2 litra uje dhe e leme te ziejne per 40-45 minuta.
Fillojme me rizoton: ne fillim skuqim frutat e detit dhe i heqim me vete ne nje ene.
Me pas skuqim qepen me karroten deri sa te karamelizohen, i shtojme orizin dhe e kaverdsim pak me perimet me pas e shuajme me vere te bardhe dhe i shtojme lengun e pergatitur pak e nga pak deri sa orizi te behet.
Hedhim frutat e detit dhe i leme te gjitha bashke per 2-3 minuta. Me pas i heqim nga zjarri dhe i shtojme gjalpin, djathin dhe majdanozin. E leme te qetesohet per 2 minuta dhe e servirim!

Perfect White Sea Food Risotto
For the preparation of risotto we used the following ingredients:
- 1 cup rice for risotto
- 2 squids
- 10-12 shrimps
- 1 onion
- 1 Carrot
- 1/2 cup white wine
- fresh village butter
- Parmesan cheese
- olive oil, salt and black pepper
At first we need to prepare the vegetable stock. It is very important to have it ready when we start the risotto.
For the preparation of the vegetable stock we used: shrimp heads, onions, carrots, parsley, salt and pepper. We throw them all in a container with 2 liters of water and let them boil for 40-45 minutes.
We start with risotto: first we fry the seafood (shrimps and squids) and take them with us in a bowl.
Then fry the onion with the carrot until caramelized, add the rice and let it a little with the vegetables, then add 1/2 cup of white wine and add the prepared vegetable stock little by little until the risotto is done.
Add the seafood and leave it all together for 2-3 minutes. Then remove from the heat and add the butter, cheese and fresh parsley. Let it cool for 2 minutes and serve!
